The history of the Clark family in butchery goes back to 1835. The family abattoir and shops were based in Ware in Hertfordshire. The business thrived until the arrival of the large supermarkets resulting in the closure of the abattoir in 1976. Being a supplier of meat to 100 other butcher shops throughout the home counties this had a knock on effect resulting in the closure of many of these shops. Clark’s last butcher shop finally closed in 1988.
Julian continued with the transport side of the business until a request from his daughter at Christmas 2013 to make sausages using the family recipe. The old sausage making equipment which had been in storage for many years was taken out and the sausages produced. They proved such a hit with family and friends that Julian decided to start making them commercially and has not stopped since now producing up to half a ton each week.
A new state of the art production unit was built to meet the demand. Clark’s are now supplying sausages, home cured bacon and home cooked ham to pubs, restaurant, bed and breakfast and local shops.

Julian’s experience in the family butchery business means he has a detailed knowledge of all aspects of the business. He can judge and select livestock, slaughter and butcher them and take the product to point of sale. He is one of the few people who can genuinely call himself a master butcher. This knowledge ensures that the Clark’s products are always of the highest quality.
The number of awards won, in a relatively short time, is testimony to the quality. The awards include a gold certificate for best traditional sausage in the east of England and an award presented by Craig Revel-Horwood of which Julian is particularly proud.
