Tomato & Fennel recipe – The Artisan Food Trail

This delicious and comforting tomato and fennel soup is a great way to use up a glut of homegrown tomatoes. You can, of course, use shop bought tomatoes.

The flavour is deep and savoury with a slight tang and the subtle aniseed notes of fennel make for an interesting change.

We like to serve the soup alongside our homemade Pesto Swirl Rolls. If you don’t have time to make them, a good hunk of crusty bread from the bakery will do just as well.
