Recipe: Blue Cheese Pâté
This blue cheese pâté is rich and delicious, simply made with Stilton, cream cheese and chives. It is ideal as an indulgent starter served with some crusty sourdough bread alongside some slices of fresh pear and a spoonful of fig relish.
Although rich and creamy the pâté has a surprisingly light, almost mousse-like texture. This is achieved by the blending in a food processor which helps to incorporate some air.
